WHOLEMEAL FRUIT SCONES

Ingredients:
60g            Butter or Margarine
1                Cup Wholemeal Self-raising Flour
1                Cup Self-raising Flour
125g          Raising, Sultanas or Chopped dates
1/2             Cup Milk
1                Egg Beaten

Preparing :
Place butter into mixing bow1, beat until soft. Add flour and mix into butter with dough hooks, add fruit Mix in milk and egg forming a soft dough -a little extra milk may be required. Turn onto floured board and knead lightly cut into tounds and place on a lightly floured oven tray bake in a pre-heated 220°C oven for 12 minutes.

BANANA NUT BREAD

Ingredients:
1              Cup Sugar
1/2           Cup Butter or margarine, Softened
1/2           Tea spoon grated Lemon Rind
2              Eggs
1              Cup mashed, Ripe banana
1/4           Cup Milk
1 3/4        Cups Flour
1 3/4        Tea spoons baking powder
1/4           Tea spoon bicarbonate of soda
1/2           Cup chopped walnuts

Preparing :
In mixing bow1 cream sugar, butter and lemon rind at speed 4 for 1/2 minute. Scrape sides of bow1 constantly blend mixture at speed 5 for 2 minutes, add egg, banana and milk.
Continue to mix for 1 minute, stir it remaining ingredients at speed 2. Pour into greased loaf tin bake it pre-heated 180°C oven for about 1 hour. Cool 5 minutes, remove from tin. Cool completely before slicing.


Cold Peanut Chicken Noodles

Ingredients:
12 ounces soda noodles
1/2 cup peanut butter
2 tablespoons vinegar
1 cup frozen edamem
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon grated peeled ginger
1 teaspoon chili sauce
1 cup shredded chicken
1 cup diced cucumber
1/2 cup chopped scallions
